Which native app (iOS) is currently more up-to-date?
The official new 3.4.0 in the AppStore or the BETA 3.4.0 (205) in TestFlight?
Which version should I use?

Well I'm on adroid, and in the beta, updated mine earlier and it's showing as 3.4.0 (205)

Where would I find the new version of Dronelink for Windows 11, Does not seem to show up in Microsoft Store

I have received the update message in Dronelink screen and have updated to 3.4.0

I assume this is the latest version.

Does not seem to show up in Microsoft Store

We only have an iOS and Android native app - not windows. The web updates automatically.
