180 pano in beta web app, gimbal pitch

Is there any way of changing this from the default 0 Degrees, say if i wanted to focus on something, I've tried using point of interest and changing altitude offset, but that didn't work, I can't seem to find where the gimbal command that i can see in preview is

Good question, I too am interested in the response. It does the same in DJI Fly, even if you set it to -10°, or some such number, it automatically goes back to 0 as soon as you start a pano. The only way sometimes is to go lower in altitude, but that is not always possible.

The new Pano component is just a start and we plan to enhance it over time. Part of the issue with allowing different gimbal angles for the 180 is that the overlaps should change but that doesn't happen yet so we restrict it to 0 degrees. For the time being, you can either use the 360 option and delete the photos you don't want, or use the old style Pano where you build it up from scratch out of lower level components.
