Subscription for Terrain Following
I have a job coming up that requires terrain-following on a hillside and which will therefore require at least the Starter package. If I subscribe to that for one month, will the terrain-following plans I create in that month continue to exist after the month is over?

All plans as are saved in your Repos so you won’t lose them at any time. You can edit, move, relocate plan etc.
Starter Business plans are per month but billed annually as stated in their pricing guide.

As mentioned, the plans will stay saved and you will be able to view them, but after your subscription lapses the account will be cancelled and you won't be able to edit them, or fly them anymore. You'd have to re-activate the account, at which point you can do those things.
Just FYI, you can also buy the Starter plan monthly, it is just more per month then the annual option.

It's a lot to pay for being able to do just one job and also to only have that available for one month so I'm going to have to create a waypoint plan with AGL settings to cover the land that a map would have done. That should be interesting!
You didn’t mention it was mapping you wanted to utilize but If I’m not mistaken the mapping component does have Terrain Follow available on Hobby Elite plan. I’m sure Jim or Jacob could confirm this or not. I have an older Hobby Premium plan and it has Terrain Follow function.
I use AGL markers a lot with paths and they work really well. I’ve ran 35’ AGL and even lower at times and no issues. The thing to remember is the ESRI data which is used for elevations is only accurate for every 30m along the path. So I place markers along the path when there is any elevation change especially when it increases. Depending on the length of path and elevation changes you should place an AGL marker every so often to get an accurate flight.
I’ve shared this path plan several times so others can see how they work. I’ve actual ran this plan in a Forest area which ends up over 500’ in elevation higher than the take-off location over about 3.5 miles. Followed with my motorcycle the first time just to see how well it worked. No issues. So if you set at altitude an of 100’ or more I doubt you will encounter any problems if set up properly. Just be careful if much lower altitudes and use more especially in areas which change in elevation up. Whatever you decide I know this is all possible with DL. Hope this helps. Enjoy….

It's not available in the Elite subscription as the pic shows.
It might be useful if I shared what I'm doing and where I have got in my flight plan so far.
To help a friend and local landowner develop an area of land for biodiversity, he wondered if I could produce a 3D model of the area now soon after having sown all sorts of plants alongside other activities for insects. He would like me to do the same in a couple of years to see how it's changed.
The plot of land is on a slope and having found out that I need the AGL height reference I then discovered it was not available in my Elite subscription (one might have thought that Elite for noncommercial and hobby uses might have incorporated the feature but that's another story). So I have set about creating a type of Map plan using a lot of waypoint plans joined together. It looks rather a mess but should work when I have added another one at right angles to this one.
To get sufficient imaging detail I need to fly at 30-50ft so I will probably need even more paths closer together to get the required overlap for the 3d model, as well as another plan and right angles as mentioned.
I saw in a video the use of markers with an altitude setting so I have added those Without those additional markers it plows into the ground at various points (Question: why doesn't setting Ground reference in the Approach and Destination points alone suffice?) So here is the intended flight path:
