DJI Fly autoloads
When I turn the mavic air control on, the dji fly app automatically loads into the ipad. Can I disable this? I have to exit it and load DL which is a pain.

The Mavic Air, as you write, is flown with the DJI Go4 app, not with the Fly app.
But I think you mean with the Mavic Air 2.
Hear the question again and again, don't know if you can deactivate this somewhere. The same applies to the Mavic Mini and the Mini 2.
I don’t know of a way. I let it load and have it set up to automatically go into the camera view. This way I know it’s all up and working and then wait until home-point is updated anyway. While waiting I always check all my settings like, RTH altitude, max altitude, max distance, video cache amount, obstacle avoidance, transmission etc… It only takes about 30 seconds or so and once I’m done I just wait for satellites. It only takes about 1 to 2 minutes to get enough satellites then I just close app and start DL. IOS devices are easy because you just double tap the home button and swipe up to close. Just like anything else you will get used to it and it won’t hurt to let it load first.
For Android I always get presented with the option to use DJI or Dronlink just once or always. I always select the one time option. I suspect at one time you opted for DJI always, perhaps before you installed the Dronlink app. So, you'll need too search app options to unselect the always option for DJI.

Apparently, this isn't so easy in iOS as it is in android, as apple look things up so tight that you have to set their devices up the way they want them to be
There is no option to select which app with IOS. It takes literally 2 seconds to close it. I’ve used DL this way since December, 2020 and it always works to ensure everything is up and running and ready to go, especially the live video feed. Even if you do just open DL, you would still need to wait a couple minutes for satellites anyway and there is no audible notification for home-point being recorded. I guess I’m more patient. No need to be in a hurry to fly a drone. Enjoy everyone.

If this were Android you would go to the DJI app and look for a set as default option and make it not default. Does iPad allow you to control apps?
As stated above, there is no way to select any app. It starts up when controller is powered on because it knows your going to fly. Simple.
So how does it know which app you want to use, DJI Fly or Dronelink? That was the concern for the OP.
On iOS it automatically launches whichever DJI app you have installed, so you then have to close it & then open DL, there is no other option, due to the way th OS is configured by Apple
What would happen if there were no DJ app installed and only Dronelink?
Not having the DJI app installed would cause you to lose many of the functions and features in the app which DL can’t do. DL is mainly a auto mission app. DJI is used for manual flight. Apple products are the easiest to close apps in literally 2 secs. Manually touching the DL app icon takes 1 second. Moving on 🏃🏻♂️
