Gimble pitch vs point of interest

I have a flight path programmed in waypoints. The point of interest is in the center of the project and set at 0 feet. I wanted to try to adjust the gimble pitch down to help remove some of the horizon in the photograph and focus on the ground of the project. Every time I add a -gimble pitch, and run a mission test, it removed the point of interest.

My question is, is there a way to have both the point of interest , and adjust the gimble pitch?

If you look on the settings for the point of interest, you'll see a setting for altitude offset, if you set this to a - figure it will force the gimbal down, but still focus on the point of interest
