When the camera is angled, what FOV is used to calculate overlap percentage?

I'm currently using mapping missions to conduct lawnmower pattern surveys of large mammals. If I set my camera angle to 45 or 55 degrees, what field of view is it using to calculate my 5% overlap? Because of the camera angle, the FOV at the top of the image is substantially different than the midpoint and the bottom.
