Maximum speed limits
I'm trying to find the best settings to conduct a mission, in order to optimize the use of the battery, the needed GSD, ISO, shutter speed, sharpness of the photos, etc ..
On the same mission if I set a flight height to 70m or 75m and set the speed to 34 km / h it seems that everything works fine, but when I set a flight height to 80m or 85m the web app seems to reduce my maximum speed to 25 km / h.
I do not understand why!

The speed is just the maximum allowed. Dronelink has to find a value at or below that speed that also satisfies your capture interval (time) and overlap requirements - this is a multi-variable equation where all these inputs affect the others.

I accept this explanation as you gave it to me.
In practice, if I want to conduct a mission at a specific speed, I will have to work empirically by setting the maximum speed to an "x" value to obtain a real "y", proceeding by trial and error.
Or is there a different method?
