What pricing for Hobbyist would i have to purchase for me to be able to take photos for mapping with my Mavic Air 2s?

You need to buy the Elite plan to get mapping as a Hobbyist.
So mapping in terms of orthomosaics, is that the right one?
That is correct. Use mapping to get the data for orthomosaics, you'll need to process with a 3rd party photogrammetry company.

FWIW
The Mavic Air 2S, Mini 2, and the Mini SE are currently only supported on Android (production) and iOS (beta).
I will suggest the Elite edition but with the Basic plan, you can also do the orthomosaics with the Dronelink.
I am an Elite user but some of the map mission I run is planned manually.
And, there are many useful features in the Elite edition including the Mapping.
