When i setup a destination I try to set the gimble pitch but always goes back to zero. Can you advise if I’m doing something wrong or show me to a tutorial

Not sure what the error is.
a) Realize that '-90 degrees" is pointed straight down.
b) 30 degree is tilted up
c) 90 degrees is impossible and it will reset back to 0
I looked at Hung's mission and it looked ok to me. Does it give an error when it runs? Can you screen capture a video of the mission running and post that?

I want Gimble Pitch keep -90 in full Path component (start from Mark 1), but it not (it = 0):
You have a second marker with the pitch set to zero and it interpolates. Maybe you should remove it?
