The feature that you specifically mentioned has a context sensitive help if you mouse over the item on your PC.
The below and above are the altitude range (+- the assigned altitude) that the drone must be in to do the orbit.. Just gives a little range due to wind, etc.
It's worth mentioning that the altitude range shows up in other places, like Destination component. What it means is, do not start flying horizontally until you are within a certain altitude range of the target. The reason it show up on Orbit is because the Orbit component type has a Destination component embedded inside it.
